Badushahs (also spelled Bhadushah) are made from a stiff dough made with all-purpose flour, ghee and a pinch of baking soda One-inch-diameter (25 mm), 1⁄2-inch-thick (13 mm) discs are shaped with hands, fried in ghee or oil and dunked in thick sugar syrup so that there is a sugar coating. They are very sweet, but tasty with a slightly flaky texture.Balushahi is a traditional dessert in Indian, Pakistani, Nepali and Bangladeshi cuisine. It is a famous sweet of Harnaut of South Bihar. It is similar to a glazed doughnut in terms of ingredients, but differs in texture and taste. In South India, a similar pastry is known as badushah.
Ingredient :-
- Maida / All purpose flour / wheat flour– 1 cup
- Butter – 4 tbsp
- Ghee – 1 tbsp
- Oil – 1 tbsp
- Sugar – 1 tbsp
- Salt a pinch
- Curd – 1 tbsp
- Water as needed
- Oil & ghee for deep frying
For sugar syrup:-
- ¾ cup sugar
- 1 cup water
- Green cardamom – 3
- Lemon juice – ½ tbsp
Methods :-
- Sieve the flour without lumps.
- In a bowl add butter, curd, sugar, & salt beat well. Then add ghee, mix well.
- Add flour & water mix well, knead & make soft smooth dough.
- Then add oil knead it again, cover it & leave it for 5 min.
- For sugar syrup add water & sugar in a pan mix gently & let it dissolve.
- Then add cardamom & let it boil 7 min to get string consistency then add lemon juice to avoid crystallization. Then cut off heat.
- Divide the dough into equal size balls. Then press gently in the middle of the balls like doughnuts.
- Then make decorative edges around the balls like kai / hand muruku or we can make designs using knife or mould.
- Heat oil & ghee in a pan, put pieces one by one & deep fry on medium flame.
- Once fried flip over & cook another side.
- Once it’s turned light brown take it out. Drain on an absorbent paper.
- Immediately place in to the sugar syrup & leave it for 2 min. Then take it out & cool it inroom temperature.
Once sugar syrup fully absorbed & totally dried then store it in an airtight container & use within 5 days.
