Balu shahi

       Badushahs (also spelled Bhadushah) are made from a stiff dough made with all-purpose flour, ghee and a pinch of baking soda One-inch-diameter (25 mm), 12-inch-thick (13 mm) discs are shaped with hands, fried in ghee or oil and dunked in thick sugar syrup so that there is a sugar coating. They are very sweet, but tasty with a slightly flaky texture.Balushahi is a traditional dessert in Indian, Pakistani, Nepali and Bangladeshi cuisine. It is a famous sweet of Harnaut of South Bihar. It is similar to a glazed doughnut in terms of ingredients, but differs in texture and taste. In South India, a similar pastry is known as badushah.

 

Ingredient :-

 

  1. Maida / All purpose flour / wheat flour– 1 cup
  2. Butter – 4 tbsp
  3. Ghee – 1 tbsp
  4. Oil – 1 tbsp
  5. Sugar – 1 tbsp
  6. Salt a pinch
  7. Curd – 1 tbsp
  8. Water as needed
  9. Oil & ghee for deep frying

      

      For sugar syrup:-

  1. ¾ cup sugar
  2. 1 cup water
  3. Green cardamom – 3
  4. Lemon juice – ½ tbsp

 

Methods :-

 

  1. Sieve the flour without lumps.
  2. In a bowl add butter, curd, sugar, & salt beat well. Then add ghee, mix well.
  3. Add flour & water mix well, knead & make soft smooth dough.
  4. Then add oil knead it again, cover it & leave it for 5 min.
  5. For sugar syrup add water & sugar in a pan mix gently & let it dissolve.
  6. Then add cardamom & let it boil 7 min to get string consistency then add lemon juice to avoid crystallization. Then cut off heat.
  7. Divide the dough into equal size balls. Then press gently in the middle of the balls like doughnuts.
  8. Then make decorative edges around the balls like kai / hand muruku or we can make designs using knife or mould.
  9. Heat oil & ghee in a pan, put pieces one by one & deep fry on medium flame.
  10. Once fried flip over & cook another side.
  11.  Once it’s turned light brown take it out. Drain on an absorbent paper.
  12.  Immediately place in to the sugar syrup & leave it for 2 min. Then take it out & cool it inroom temperature.

Once sugar syrup fully absorbed & totally dried then store it in an airtight container & use within 5 days.
